Bays are often grown in pots and respond well to topiary training with lush, glossy and dense foliage. They require little more than a light trim in early spring and summer to maintain a desired shape and will happily grow in sun or partial shade in well-drained soil. They’re also well suited to coastal locations.
For ease, pluck leaves fresh from the plant and add them whole to a pot, before leaving to infuse the cooking. Fresh leaves boast a lighter, more floral flavour than dried leaves and can be kept in the fridge. If dried, they have a more intense flavour. They should be removed before serving unless they're ground or chopped.
